Papa a la Huancaína

6-8 Peruvian yellow pepper
10 oz Feta cheese
12 oz Milk
1 tsp. Salt
5-10 Salt crackers
6 Potatoes
3 Eggs
4 Leaves of romaine lettuce
2 Olives
2 Garlic cloves

Directions

First, boil, peel and cut in slices potatoes. Next, in a blender, mix the cheese, peppers, milk, oil, garlic, salt and pepper. The sauce should be fairly thick; add more cheese and olive oil if not, or add milk is too thick. Following, lay a bed of lettuce in a serving dish and place the potatoes on top. Cover with the sauce. Cut the hard boiled eggs in quarters or halfs and place on top of the potatoes. Add black olives if desired.

6-8 Ají amarillos
10 oz Queso blanco
12 oz Leche
Sal
Galletas de sal
6 Papas
3 Huevos
4 Hojas de lechuga
2 Olivas
2 Dientes de ajo

Instrucciones

Sancochar las papas, pelarlas y cuando enfríen partirlas en tajadas. Freír un poco el ají previamente despepitado y dejar enfriar. Para preparar la salsa, vierta en la licuadora el ají, 2 dientes de ajo, un poco del queso fresco trozado, galletas y leche. comenzar a licuar manteniendo una mezcla espesa, agregando poco a poco y hasta terminar el resto de los ingredientes.

Servir colocando la hoja de lechuga, las tajadas de papa, la salsa y decorar con el huevo y aceituna.
